Ingredients
- 400 g rye flour
- 100 g wheat flour
- 1 egg
- Salt
- 3 tbsp oil
- warm water (as needed)
- 50 g chives loops
- 250 g Quark (20% fat)
- Salt
- Pepper (freshly ground)
- nutmeg
- 3 tbsp grated parmesan
- 1 cooked potato
- 2 tbsp butter
- 250 g walnut halves

Mix quark with chives, mashed potato, parmesan, salt, pepper and nutmeg well.

Knead flour, egg, salt, oil and warm water into a smooth dough. Let rest 30 min. Roll dough thin on a floured surface. Cut circles with a round cutter. Place 1-2 tsp of quark filling on each circle, fold over and press edges together with a fork.

Cook the dumplings in boiling salted water 2-3 min per portion, then lift with a slotted spoon and drain.

Melt butter in a pan over low heat and sauté walnut halves. Season with salt and plenty of pepper (optionally add sliced chili). Gently toss dumplings in walnut butter, plate immediately and serve.
