Ingredients
- 1.5 red bell peppers
- 1.5 green bell peppers
- 4 sun-dried tomatoes (in oil)
- 1 can corn
- 400 g penne
- Salt
- 2 tbsp olive oil
- 2 tbsp capers
- pepper (ground)
- 1 tbsp balsamic vinegar
- 2 tbsp white balsamic vinegar
- 2 tsp Honey
- 60 g Parmesan

Wash, trim, seed and remove the membranes from the bell peppers. Slice into strips. Drain the sun‑dried tomatoes and chop them small. Cook the penne in plenty of salted boiling water until al dente.

Heat the oil. Sauté the peppers and tomatoes for about 8 minutes. Add corn and capers. Warm through and season with salt, pepper, balsamic vinegar and honey. Drain the penne and toss with the vegetables. Grate parmesan over the top and serve immediately.
