Ingredients

  • 400 g flour
  • 300 g sugar
  • 1 egg
  • 200 g softened butter
  • 1 tsp cinnamon powder
  • 3 sour apples (e.g., Boskop)
  • 3 tbsp Lemon juice
  • 2 Eggs
  • 500 g quark
  • 2 egg yolks
  • 100 g semolina
  • fat for the pan

Instructions

    Pour flour onto a work surface, place 150 g sugar and the egg in a well, cut butter into flakes and spread on the edge. Quickly cut through with a knife, then knead by hand.

    Divide dough in half, mix cinnamon into one half. Shape both doughs into balls, wrap in cling film and refrigerate for 30 minutes.

    Roll out the non‑cinnamon dough on a floured surface, line the greased pan with it, press down the edges and prick the bottom several times with a fork.

    Wash, peel, quarter apples, remove cores, slice thinly and mix with lemon juice. Separate eggs. Mix quark, remaining sugar, and 4 egg yolks; fold in semolina. Whisk egg whites until stiff and fold into the mixture. Spread dough with apples, pour quark layer over it, grate cinnamon dough for streusel and sprinkle on top. Bake in a preheated oven (middle rack, fan 160°C) for 50–60 minutes.
