Quark Terrine with Strawberries

- 300 g Strawberries
- 200 g pistachios
- 300 g Low-fat quark
- 200 g Cream cheese
- 1 untreated lemon
- 4 sheets gelatin
- 2 tbsp honey
- 2 tbsp Waldmeister syrup

Wash strawberries and pat dry. Set aside 1 tbsp pistachios, finely chop the rest. Grate lemon zest, peel, fillet, remove seeds and finely chop fruit flesh. Soak gelatin in cold water. Drain quark and mix with cream cheese. Add lemon zest and fruit flesh, then stir in honey and Waldmeister syrup. Melt gelatin, slightly wet, in a small pot over low heat, stir in some cream cheese, then fold into the cheese mixture. Pour the cheese cream into a 1.5‑liter loaf pan lined with foil, layering strawberries and whole pistachios between layers. Chill for 4 hours.

Remove terrine from mold, briefly hold in hot water. Sprinkle finely chopped pistachios around and slice into rounds.
