Ingredients

  • 750 g flour
  • 1 packet baking powder
  • 1 pinch salt
  • 200 g sugar
  • 1 packet vanilla sugar
  • 2 Eggs
  • 400 g butter
  • 1.5 kg quark
  • 200 g sugar
  • 4 eggs
  • 100 ml whipping cream
  • 2 packets Vanilla Pudding Powder
  • 100 g almond sticks
  • 1 kg apricots
  • powdered sugar (for dusting)

Instructions

    Sift the flour onto a work surface, mix with baking powder, salt, sugar and vanilla sugar, then press a well into the center. Cut cold butter into small pieces and distribute around the well; add eggs and about 50 ml lukewarm water. Use a knife to cut through all ingredients until small dough crumbs form. Quickly knead by hand into a dough, shape into a ball, wrap in cling film and chill for about 30 minutes.

    Preheat oven to 200 °C (fan). For the filling whisk quark with sugar, then gradually add eggs, cream, pudding powder and almond sticks. Wash apricots, halve, pit and cut into thin slivers.

    Line a baking tray with parchment paper. Roll two-thirds of the shortcrust dough between two sheets of parchment to the size of the tray, lay it on the tray, pricking it several times with a fork. Spread the quark mixture evenly over the base and top with apricots. Sprinkle the remaining dough over the topping. Bake in the preheated oven for about 45 minutes until golden brown (test with a skewer). Remove, cool, cut into pieces and dust with powdered sugar before serving.
