Quark-Streusel-Kuchen mit Mandarinen

Ingredients
- 100 g flour
- 100 g Ground Almonds
- 3 tbsp sugar
- 1 pinch salt
- 1 tsp grated orange zest
- 50 g butter
- 1 egg
- 100 g cream cheese
- 1 small can mandarins
- 1 tsp grated orange zest
- 2 tbsp sugar
- 125 g whipping cream
- 4 sheets white gelatin

Knead flour, almonds, sugar, a pinch of salt, orange zest, butter and egg into a firm dough. Wrap the dough in cling film and let rest for 30 minutes.

Roll out two 20 cm diameter discs from the dough, place them on a baking tray lined with parchment paper and bake in a convection oven at 180°C (middle rack) for 18-20 minutes. Let cool. Crumble one disc.

Place the cake base on a plate, set a ring around it. Mix cream cheese with mandarin juice, orange zest and sugar until smooth. Whip the cream stiffly and fold in.

Soak gelatin in cold water, gently dissolve in a small pot over low heat, stir into a little cream, then quickly fold into the remaining mixture. Chill for 30 minutes.

Distribute mandarin slices on the cake base, pour the cream over them and smooth the surface. Refrigerate the cake for at least 2 hours. Before serving, release from the mold, sprinkle with crumbs and cut into pieces.
