Quark Mousse with Berries

Ingredients

  • 3 sheets white gelatin
  • 1 egg
  • 150 g quark cream cheese
  • zest of lemon juice
  • 5 tbsp sugar
  • 1 vanilla pod
  • 75 g black currants
  • 250 g red currants
  • 150 ml whipping cream
  • 4 tbsp currant liqueur
  • Lemon balm

Instructions

    Soak gelatin in cold water, separate the egg. Split the vanilla pod lengthwise and scrape out the seeds. Mix quark, yolk, 1 tbsp lemon juice, vanilla seeds, and 4 tbsp sugar. Squeeze out excess liquid from gelatin and dissolve with 1 tbsp liqueur in a small pot over gentle heat, then stir into the quark mixture and chill.

    Rinse black currants and strip them from their stems.

    When the mixture starts to set, whisk egg white and cream until stiff peaks form, fold into the mousse along with the black currants, and refrigerate.

    Wash red currants, strip from stems, pass 200 g through a sieve, mix juice with 1 tbsp sugar, then stir remaining berries with liqueur.

    When the mousse is firm (after about 5 hours), shape with two spoons into nests and serve with berry sauce. Garnish with lemon balm.
