Quark-Pancakes with Fruit Salad

The Quark-Pancakes with fruit salad from Spoonsparrow are simply delicious again and again.

Ingredients

  • 200 g Low-fat quark
  • 3 eggs
  • 60 g Spelt wholemeal flour
  • 1 pinch Vanilla powder
  • 2 tsp Baking soda
  • 1 tbsp Coconut oil
  • 300 g Fruit (in season)
  • 2 tbsp honey

Instructions

    Whisk quark and eggs together. Stir in flour, vanilla and baking soda until a thick batter forms.

    Heat oil in a non-stick pan, add 1 tbsp of batter at a time and bake 4 to 6 pancakes golden brown on both sides in about 3-4 minutes over medium heat.

    Wash, chop and mix the fruit meanwhile. Serve pancakes with fruit and honey.
