Ingredients

  • 1 bunch spring onions
  • 1 bunch parsley
  • 8 eggs
  • 0.125 l milk
  • 4 tbsp butter
  • 500 g low‑fat quark
  • 1 tsp lemon juice
  • Salt
  • Pepper

Instructions

    Clean, wash, trim the ends of the spring onions and slice into thin rings. Wash the parsley and finely chop it.

    Whisk the eggs with the milk, season with salt and pepper. Fold in half of the sliced spring onions and parsley. Heat butter in a pan and cook portions to make four omelettes.
