Currant Jam

Ingredients

  • 500 g red currants
  • 500 g black currants
  • 100 ml Cassis
  • 500 g gelatin sugar (2:1)

Instructions

    Wash the currants and place them with their stems in a pot, pour in 300 ml water, bring to a boil, then cover and simmer for 5 minutes. Line a sieve with fresh muslin cloth and hang it over a bowl. Pour the berries into the sieve and let drain. Then squeeze vigorously until no juice comes out.

    Mix the juice with cassis, top up to 1 liter with water, and pour back into the pot. Stir in the gelatin sugar. Bring to a rolling boil over high heat while stirring for 4 minutes until it bubbles and gels.

    Fill the jam into hot-washed jars and seal immediately. Place on the lids and let cool for about 20 minutes, then invert and allow to set.
