Quinoa Salad with Chicken Breast and Apple

Ingredients
- 200 g Quinoa
- Salt
- 2 Eggs
- 300 g cooked chicken breast fillet
- 2 stalks celery
- 2 Apples
- 3 spring onions
- 120 g baby spinach
- 200 g yogurt (3.5% fat)
- 2 tbsp lemon juice
- 1 tsp Honey
- Pepper
- 1 sprig mint
Instructions

Rinse quinoa in a sieve under hot water. Cook in boiling salted water for about 15 minutes until tender. Drain, rinse with cold water in a sieve and let drain.

Meanwhile boil eggs for about 10 minutes. Drain, shock in cold water, peel and dice into small cubes. Pull chicken meat into small pieces. Clean celery, wash and slice finely.

Wash apples, halve them, remove cores and cube the flesh. Trim spring onions, wash and cut into rings. Wash spinach and dry by spinning.

Mix quinoa, eggs, chicken, celery, apples, spring onions and spinach in a bowl.

For the dressing whisk yogurt, lemon juice and honey with a pinch of salt. Season with pepper. Wash mint, pat dry, pluck leaves and chop. Fold into the dressing. Serve salad on bowls and pour dressing over it.
