Ingredients

  • 500 g quark
  • 4 egg yolks (hard boiled)
  • 0.5 tsp paprika powder
  • Salt
  • Pepper
  • 200 ml heavy cream
  • 100 g butter
  • 0.5 bunch Chives
  • 1 Garlic clove
  • Salt
  • Pepper
  • various bread (for serving)
  • 0.5 yellow bell pepper (for garnish)

Instructions

    For the quark, mash the egg yolks with a fork, strain through a sieve and mix with 2 tbsp quark until smooth, then combine with the remaining quark and season with salt, pepper and paprika. Whip the cream stiff, fold in, taste the sauce, and chill.

    Let the butter soften to room temperature. Meanwhile, peel and press the garlic, wash and cut the chives into ribbons. Mix the butter with garlic, salt and pepper, taste. With cold, damp hands shape the butter into 4 balls and roll them in chives, lightly pressing them. Place the butter in the freezer for 5 minutes. Wash, deseed and peel the bell pepper, slice into strips. From the quark cream, cut out dumplings and arrange flower‑shaped on four plates, leaving space in the center for the butter. Garnish each dumpling with a strip of pepper and place the butter ball in the middle. Serve with bread.
