Quark Dumplings

Ingredients
- 500 g cream quark
- 100 g butter
- 2 Eggs
- 120 g sugar
- 1 tbsp Lemon Juice
- 180 g flour
- 400 g lingonberries
- 3 tbsp sugar
- 100 g Sour cream
- Cinnamon
- mint (for garnish)

Place quark in a cloth, squeeze out excess moisture, then strain through a sieve. Melt butter. Combine quark with eggs, 75 g sugar, lemon juice, flour and melted butter into a dough; cover and refrigerate for 2 hours.

On a floured work surface knead the dough, then cut out 2 tbsp-sized pieces. Boil the pieces in plenty of salted water for 10 minutes. Remove them and let drain well.

Wash lingonberries, heat them in a pot with sugar and 3 tbsp water, then spread on plates. Place the dumplings in the center, sprinkle with cinnamon, and garnish with mint leaves.
