Quark Cherry Strudel

Ingredients

  • Strudelteig
  • 125 g flour
  • 1 egg
  • 1 tbsp oil (+ oil for brushing)
  • 2 tbsp lukewarm water
  • 1 pinch salt
  • 100 g butter (for the baking sheet)
  • 50 g butter
  • 2 Eggs
  • 1 packet vanilla sugar
  • 70 g sugar
  • 1 tbsp flour
  • 500 g quark
  • 200 g cherries (pitted from jar)
  • 3 tbsp butter
  • powdered sugar (for dusting)

    Sift flour onto work surface, make a well in the center, add egg, oil and salt, and mix into a smooth dough. Gradually pour in water and knead for 15 minutes, shape into a ball, brush with oil, cover with a bowl and let rest for 30 minutes. Lay a cloth on a table, dust evenly with flour and roll dough thinly onto it. Lift strudelteig with the heel of your hand and slowly pull from the center outward. Trim thick dough edges. Brush a baking sheet with melted butter.

    For the filling beat butter and sugar until fluffy, gradually add egg yolks and stir in vanilla sugar. Squeeze quark well and fold in flour. Beat egg whites very stiffly, fold in. Drain cherries well and fold in. Spread quark mixture on strudelteig, leaving a 3 cm border. Fold side edges in, lift cloth and roll the strudel. Slide strudel seam-side down onto baking sheet. Brush with remaining melted butter and bake at 200°C for 40 minutes. Dust with powdered sugar.
