Ingredients

  • 250 g sour cream quark
  • 3 sheets white gelatin
  • 70 g sugar
  • 1 packet vanilla sugar
  • zest of 1 untreated lemon
  • 250 ml Whipping Cream
  • 2 untreated oranges
  • 1 small can peaches
  • 1 tsp butter
  • 3 tbsp orange liqueur

Instructions

    Drain the quark in a sieve. Soak gelatin in cold water. Mix quark with 30 g sugar, vanilla sugar and lemon zest. Dissolve gelatin at moderate heat until dripping wet. Stir into quark under a thin stream. Whip cream stiff and fold in. Chill the quarkcream.

    Wash oranges, dry peel and separate segments. Cut half of the orange zest into fine strips. Slice oranges and halve them.

    Drain peaches.

    Heat butter in a pan, caramelize remaining sugar and then caramelize orange zest. Remove zest. Add peaches and orange slices to the pan, pour peach juice and orange liqueur, heat briefly.

    Arrange oranges and peaches with quarkcream. Sprinkle orange zest on top.
