Ingredients

  • 6 quail eggs
  • 1 Shallot
  • 100 g radishes (with greens)
  • 2 tbsp white balsamic vinegar
  • 100 g wild garlic pesto
  • 2 tbsp olive oil
  • Salt
  • Pepper

Instructions

    Boil the eggs for about 6 minutes, cool, peel and halve them.

    Peel and finely dice the shallot. Wash and trim the radishes, set aside the greens for garnish, and finely dice the radish flesh. Mix the diced radishes with the shallot, balsamic vinegar, 1 tbsp pesto, and olive oil; season with salt and pepper.

    Place the remaining pesto on a small spoon and arrange the quail eggs on top. Distribute the radish mixture over the eggs and garnish with radish leaves before serving.
