- Salt

- 4 fresh thyme sprigs
- 4 parsley sprigs
- 3 tbsp olive oil
- 1 tbsp fennel seeds

Season the quail with salt and pepper. Stuff the herbs into the cavities and secure the openings with small wooden skewers. Heat the oil in an oven‑proof skillet and brown the quail on all sides until golden‑brown, sprinkling with fennel seeds; transfer to a preheated oven at 180°C (356°F) and bake for about 15 minutes.
