Ingredients

  • 8 large cabbage leaves
  • Salt
  • 1 Carrot
  • 1 tbsp capers
  • 100 g cooked rice
  • 2 tbsp fresh chopped parsley
  • 1 egg yolk
  • 400 g mixed ground meat
  • 1 egg
  • pepper (ground)
  • 20 g clarified butter
  • 1 onion
  • 1 tsp tomato paste
  • 350 ml vegetable broth

Instructions

    Preheat the oven to 180°C with upper and lower heat.

    Cut off the thick edges of the cabbage leaves, then blanch them in boiling salted water for 2 minutes. Remove, shock in cold water, and pat dry.

    Peel and grate the carrot finely. Drain the capers well and chop them. Mix both with the rice, parsley, and egg yolk, then combine into the ground meat. Season with salt and pepper. Place a portion of the filling on each leaf’s center and roll it up, securing with toothpicks.

    In a hot pan, melt the clarified butter and brown the rolls all around until golden brown. Peel the onion and slice it into thin strips. Add the onion to the rolls, sauté briefly, stir in the tomato paste, pour in the broth, cover, and simmer in the preheated oven for 45-50 minutes with a lid on.

    After cooking, arrange the rolls on plates and serve.
