Punsch Muffins

Ingredients
- 50 g Dark chocolate (min. 70% cocoa content)
- 250 g flour
- 2 tsp Baking powder
- 1 tsp cinnamon powder
- 75 g sugar
- 75 g ground hazelnuts
- 75 ml plant oil
- 2 Eggs
- 150 g yogurt
- 1 untreated lemon (juice and zest)
- 40 ml port wine
- 20 ml rum
- 150 g dark chocolate (min. 70% cocoa content)
- 1 tbsp cocoa powder
- 1 tbsp red wine (or currant juice)
- 40 g Butter
- 120 g powdered sugar
- fruit gummy candy
- 50 g powdered sugar
- 3 tbsp Lemon juice
- marzipan star
- coarse sugar

Preheat the oven to 180°C fan. Place paper cups into the depressions of a muffin tin.

Chop the chocolate, melt it over a hot warm water bath in a bowl and let cool. Mix the flour with baking powder, cinnamon, sugar and hazelnuts.

Whisk the oil with eggs, yogurt, lemon juice and zest, port wine and rum until smooth. Add the flour mixture and quickly combine with the melted chocolate. Fill the cups and bake for about 30 minutes. Remove from the tin and cool.

For decoration of six reindeers, chop the chocolate finely and melt it over a hot water bath in a bowl. Let slightly cool and spray onto parchment paper laid on a tray using a squeeze bottle to create antlers. Chill until firm. Mix cocoa powder with red wine. Stir in butter vigorously and gradually whisk in powdered sugar. Brush the muffins with this mixture and decorate with antlers and fruit gummy as desired.

For decoration of the six star‑muffins, mix powdered sugar with lemon juice into a thick glaze and pour over the muffins. Top with cinnamon stars and sprinkle with sugar before letting cool.
