Classic cupcakes taste simply heavenly.

Ingredients

  • 175 g butter
  • 150 g sugar
  • 4 eggs
  • 1 untreated lime (juice and zest)
  • 175 g flour
  • 40 g ground almonds (peeled)
  • 0.5 tsp Baking powder
  • 250 g soft butter
  • 100 g sugar
  • 1 vanilla bean (pulp)
  • 250 g cream cheese
  • 250 g powdered sugar
  • edible flowers (e.g., pansies and sunflowers)
  • powdered sugar for dusting

Instructions

    Preheat the oven to 180°C fan‑forced. Line a cupcake or muffin tin with paper liners.

    Beat the butter with the sugar until fluffy. Whisk in the eggs, lime juice and zest, then fold in the flour, almonds, and baking powder. Mix well and fill the liners. Bake for about 25 minutes until golden brown. Remove from oven and cool.

    For the frosting, cream the soft butter with sugar and vanilla pulp, then fold in the cream cheese. Gradually add powdered sugar until a piping‑ready consistency is achieved. Pipe onto cooled cupcakes using a star tip. Garnish with edible flowers and dust with powdered sugar.
