Instructions
-
1.
Peel the banana, mash it finely with a fork and mix in lemon juice.
-
2.
Beat eggs with sugar, oil and buttermilk until frothy. Fold in banana mixture. Sift flour with baking powder and stir in chocolate briefly until all dry ingredients are moist.
-
3.
Grease the muffin tin (or insert two paper liners into each slot).
-
4.
Fill the tin cavities (or liners) with batter and bake in a preheated oven at 200°C, center rack, for about 20 minutes.
-
5.
Remove and let cool.
-
6.
Place paper liners in the muffin tin slots (without the tin, always insert two liners together).
-
7.
Mix flour, baking powder, sugar, salt, cinnamon, nutmeg, clove powder and hazelnuts in a bowl.
-
8.
Wash orange hot, pat dry, grate peel and add to the bowl. Squeeze out juice.
-
9.
In another bowl whisk eggs, milk, orange juice and butter.
-
10.
Combine both mixtures briefly until dry ingredients are wet.
-
11.
Fill liners with batter.

12.
Bake at 200°C, center rack, for about 25 minutes until golden yellow.
-
13.
Whisk powdered sugar with lemon juice thickly. Take about 2 teaspoons, darken with cocoa. Spread white glaze generously over cupcakes. Fill a small plastic bag with brown glaze, cut a tiny corner and spray rings; pull them outward with a toothpick in a net pattern and let dry.
-
14.
Make a thick icing from powdered sugar and milk; color ¾ red, the rest divided into thirds green and brown, keep some white. Put each color into small paper squeeze tubes. Brush cupcakes with red icing and decorate with brown, green and white to resemble an apple.
-
15.
Whip powdered sugar with egg white, fold in lemon juice until thick glaze forms.
