Ingredients
- 200 g Pecorino
- 1 clove garlic
- 5 tbsp olive oil
- salt (pepper)
- 100 g pumpkin flesh
- 1 tbsp sugar
- 2 cloves of peppercorns
- 1 bay leaf
- 1 juniper berry
- 100 ml dry white wine
- 3 tbsp balsamic vinegar
- 40 g pearl barley

Cut the cheese into pieces. Peel and finely chop the garlic. Mix cheese, garlic with olive oil and season generously with salt and pepper.

Dice the pumpkin flesh. Stir in sugar, bay leaf, peppercorns, juniper berries, white wine and vinegar. Simmer gently in a pot for 50 minutes over medium heat. After 20 minutes of cooking, stir in the pearl barley.

Let the pumpkin mixture cool slightly.

Combine the cooled pumpkin mixture with Pecorino and mix well.

Serve the Pecorino-pumpkin blend in a hollowed-out pumpkin for an attractive presentation.
