Pumpkin Squares with Walnuts

Ingredients

  • 500 g pumpkin flesh (e.g., muskmelon or Hokkaido)
  • Salt
  • 400 g flour
  • 100 g ground walnuts
  • 100 g chopped walnuts
  • 6 Eggs
  • 150 g sugar
  • 50 g honey
  • 1 untreated orange (zest)
  • 0.5 tsp cinnamon powder
  • butter (for the pan)

  • powdered sugar (for dusting)

Instructions

    Cut the pumpkin flesh into large pieces and boil in salted water for 10-15 minutes until tender.

    Preheat oven to 180°C fan. Line a baking tin with parchment paper.

    Drain, mash with a fork, and let cool. Mix flour and ground walnuts. Separate eggs. Beat egg whites with sugar until stiff peaks form. Whisk yolks with honey, orange zest, and cinnamon until creamy. Fold in pumpkin flesh with chopped walnuts, then alternately fold in the walnut-flour mixture and whipped egg whites.

    Fill the batter into the prepared tin and bake for about 45 minutes until golden brown (test with a skewer). Remove from oven, let cool slightly, unmold onto a wire rack to cool completely.

    Before serving sprinkle with chopped walnuts and dust with powdered sugar.
