Ingredients
- 800 g Hokkaido pumpkin
- 50 g onions
- 200 g celery stalks
- 3 tbsp brown sugar
- 0.5 tsp Salt
- pepper (ground)
- 1 tsp cumin
- a pinch cinnamon
- 4 tbsp apple cider vinegar
- 1 tbsp chopped parsley

Wash the pumpkin, halve it, remove the seeds and dice the flesh with the skin into small cubes. Peel and finely chop the onion. Wash, trim, and cube the celery.

Add the pumpkin, onion, celery, and sugar to a large pot and bring to a boil with 250 ml water. Season with salt, pepper, cumin, and cinnamon; cover and simmer for about 30 minutes until tender. Then add the vinegar and continue cooking uncovered over high heat for about 3 more minutes. Stir in the parsley, ladle hot into clean jars, seal immediately, and let cool.
