Potato Gratin with Sheep Cheese and Tomatoes

Ingredients
- 750 g waxy potatoes
- 5 tbsp olive oil
- 1 large onion (finely chopped)
- 4 garlic cloves (finely chopped)
- 1000 g tomatoes (drained, diced small)
- oregano
- 3 tbsp parsley (finely chopped)
- 1 tsp Honey
- Salt
- Pepper
- 200 g sheep cheese (small cubes)
- 25 black olives (chunks)
Instructions

Boil the potatoes until tender, peel and slice into ½ cm thick rounds.

Heat 3 tbsp olive oil in a pan, sauté onions and garlic for 15 minutes over medium heat, then add tomatoes, oregano, parsley, honey, salt and pepper. Simmer for 15 minutes, stirring occasionally.

Brush a baking dish with 1 tbsp olive oil. Layer alternately potatoes, sheep cheese, olives, and tomato sauce in the dish.

Drizzle the gratin with 1 tbsp olive oil and bake at medium heat in a preheated oven for 40 to 45 minutes.
