Ingredients

  • 1 kg pumpkin flesh (e.g., muskmelon)
  • 2 tbsp olive oil
  • 1 tbsp Lemon Juice
  • Salt
  • Pepper (freshly ground)
  • 60 g sesame seeds (black and white)
  • 12 young spinach leaves
  • 3 mandarins
  • 200 g smoked duck breast fillet

    Preheat the oven to 180°C fan.

    Slice the pumpkin into ~5 mm thick rounds and cut out about 24 discs (~7 cm diameter). Reserve remaining flesh for another use. Place the discs on a parchment-lined baking tray, brush with oil, drizzle with lemon juice, season with salt and pepper, then sprinkle sesame seeds. Bake in the oven for about 20 minutes until golden brown. Remove from oven and allow to cool.

    Rinse the spinach, dry it thoroughly. Peel the mandarins, cut them lengthwise into halves, then slice. Slice the smoked duck breast thinly as well. Assemble each sandwich by placing a spinach leaf, a mandarin slice, and a duck slice between two pumpkin discs. Secure with wooden skewers and serve.
