Pumpkin and Wild Salmon Maki Sushi

- 1 roasted nori sheet
- 50 g pickled pumpkin
- 100 g fresh salmon fillet
- 125 g ready-made sushi rice
- 1 tsp wasabi

Cut the nori sheet in half.

Drain the pumpkin and cut into small strips or pieces. Slice the salmon fillet into 1 cm thick strips.

Place a halved nori sheet on the bamboo mat. Spread half of the sushi rice over it, leaving a narrow edge free at the top. In the middle of the rice spread a strip of wasabi paste and lay the pumpkin pieces and salmon strips on top. Using the bamboo mat, roll the mixture into a tight cylinder. Lightly wet the free edge of the nori sheet (best with a cooked, mashed rice grain) and press it onto the roll. Slice the sushi roll into six pieces. Repeat the same process with the second half of the nori sheet.
