Princess Beans

Ingredients
- 400 g princess beans
- 300 g pork tenderloin
- 100 g mushrooms
- 1 onion
- 2 tbsp chopped basil
- Salt
- Pepper (freshly ground)
- 2 tbsp clarified butter
- 150 g whipping cream
- 1 tsp grated lemon zest
- 2 tsp lemon juice

Wash and trim the beans. Slice the meat into strips. Clean the mushrooms and slice them. Peel and chop the onion. Cook the beans in boiling salted water for about 10 minutes, then drain, rinse with cold water, and let them dry.

Brown the mushrooms in hot clarified butter, then remove them from the pan.

In a pot, sauté the onions in a little clarified butter, pour in the cream, season with salt and pepper, and simmer for about 2 minutes. Add basil and beans and warm briefly in the cream.

Cook the sliced pork in a pan with hot clarified butter for about 4 minutes, season with salt and pepper, stir in 2 tbsp water, lemon zest, and lemon juice. Plate the meat with the beans and top with mushrooms.
