Curry Chicken and Fruit Stir‑Fry
A perfect after‑work recipe – quick to make, healthy, and made with fresh ingredients.
Ingredients
- 2 cloves garlic
- 400 g chicken breast fillet
- Salt
- Pepper
- Cinnamon
- curry powder
- 400 g Basmati whole grain rice
- 200 g peaches
- 200 g pineapple (0.5 pineapple)
- 1 Banana
- 1 tbsp oil
- 150 ml chicken broth
- 250 ml heavy cream (30% fat)

Peel and finely chop the garlic. Rinse the chicken, pat dry, and cut into strips. Then mix with salt, pepper, garlic, cinnamon, and 2 tsp curry; let marinate for 30 minutes.

Cook the rice according to package instructions using double the amount of salted water on medium heat for 30–35 minutes.

Wash, pit, and cube the peaches. Peel and dice the pineapple. Peel and slice the banana.

Heat oil in a pan and brown the chicken for 5 minutes over medium heat. Add banana, pineapple, peaches, and about 100 ml water; cook for 1–2 minutes on medium heat. Then add chicken broth and cream, bring to a brief boil. Season with additional curry and cinnamon, taste, and serve over rice.
