Ingredients

  • 5 garlic cloves
  • 1 lamb leg (with bone, about 2.5 kg)
  • 1 tbsp Olive Oil
  • Salt
  • Pepper (freshly ground)
  • a handful of fresh herbs (e.g., rosemary, thyme, basil, oregano)
  • 2 carrots
  • 2 onions
  • 200 g celery root

Instructions

    Peel the garlic and cut each clove in half lengthwise. Wash the lamb leg, pat it dry, and use a sharp knife to prick it all over several times. Insert the garlic halves into the cuts. Place the leg on a baking tray and brush with olive oil. Season generously with salt and pepper from all sides. Wash the herbs, pat them dry, pluck the leaves, and finely chop them. Rub the lamb leg all around with the herb mixture and arrange peeled and roughly cubed vegetables around it. Cover and refrigerate for at least an hour to allow flavors to meld.

    Preheat the oven to 180°C (350°F) with both fan and conventional heat.

    Drizzle a little oil over the leg again and roast in the oven for 1.5–2 hours. After about 30 minutes, pour some water into the pan and turn the leg after roughly half of the roasting time. Occasionally spoon the cooking liquid over the meat.

    Remove the finished lamb leg from the oven and let it rest wrapped in foil for about 10 minutes.

    Meanwhile strain the sauce and adjust seasoning.

    Slice the meat away from the bone, arrange on a plate with the sauce, and serve.
