Fish with Broccoli

The Spoonsparrow recipe for fish with broccoli is guaranteed to succeed and is also ideal for taking to the office.

Ingredients

  • 800 g fresh broccoli
  • 60 g sun-dried tomatoes in oil
  • 50 g Pine nuts
  • 480 g sea bass fillets (in 8 equal pieces)
  • 1 tbsp Lemon Juice
  • Salt
  • Pepper

Instructions

    Bring a pot of salted water to a boil. Wash the broccoli and cut into small florets. Boil for about 5 minutes until al dente, then drain and shock with cold water; set aside.

    Drain the tomatoes and reserve the oil. Let them dry and slice into strips.

    Coarsely chop the pine nuts and spread on a plate. Rinse the sea bass fillets, pat dry, drizzle with lemon juice, salt, and pepper. Coat each fillet in the pine nuts and press to adhere.

    Heat about 1 tbsp of the tomato oil in a pan. Add the broccoli and sauté for about 3 minutes; mix in the tomatoes, season with salt and pepper. Remove and keep covered and warm. Add another 2 tbsp of oil to the pan and fry each side of the sea bass fillets for about 3 minutes.

    Serve two fillets of fish with broccoli per plate.
