Grilled Brassen

Ingredients
- 4 small Geiss- or white brassen, cleaned and gutted (or e.g., gold brassen)
- 4 lemons
- Salt
- pepper (from the mill)
- 2 tsp lemon juice
- 8 sage leaves
- 2 tbsp olive oil
- oil (for the foil)
- 150 g shallots (or onions)
- 1 Garlic clove
- 1 bunch parsley
- 1 tbsp oil
- Salt
- Pepper
Instructions

Wash and pat dry fish inside and out. Mix salt, pepper, and lemon juice and rub onto the fish. Wash sage leaves and place in the fish. Wash lemons hot and cut crosswise into halves.

Preheat grill and brush a large piece of foil with olive oil.

Peel shallots and garlic and dice finely. Wash parsley, shake dry, and chop finely. Sauté shallots and garlic in oil without browning until translucent, then cool. Mix with parsley, season with salt and pepper, and arrange in a bowl.
