Potato-Vegetable Rings "Luftikus"

Light and airy snack for kids that also works great as finger food at a children's party.

Ingredients

  • 500 g Potatoes
  • Salt
  • 1 large carrot
  • 10 g green olives (seedless; 4 green olives)
  • 50 g onions (1 onion)
  • 20 g butter (1 tbsp)
  • 150 ml milk (1.5% fat)
  • 1 egg
  • nutmeg

Instructions

    Wash the potatoes and cook them with skin in salted water for 20-25 minutes.

    Meanwhile wash, peel, and dice the carrot into very fine cubes.

  3. 3.

    Finely chop the olives. Peel and finely chop the onion as well.

  4. 4.

    Heat the butter in a pot. Sauté the onions until translucent.

  5. 5.

    Add the carrots, olives, and 3‑4 tbsp of water. Cover and simmer over low heat for about 15 minutes (add more water if needed).

    Drain the potatoes, let them steam off, then peel. Press them into a bowl with a potato masher. Add the cooked vegetables.

    Whisk milk and egg in a small bowl, pour into the potato‑vegetable mixture and stir. Season with salt and a pinch of nutmeg.

    Beat the mash with a whisk until frothy and let it cool.

    Line a baking sheet with parchment paper.

  10. 10.

    Fill a pastry bag fitted with a large round tip with the mash and pipe small rings onto the sheet. Bake in a preheated oven at 200 °C (180 °C fan, gas: level 3) for 10 minutes until golden brown.
