Ingredients
- 1 kg starchy potatoes
- Salt
- 2 egg yolks
- 100 g flour
- 1 tbsp Olive Oil
- 300 g broccoli
- Salt
- almond flakes (for turning)
- 750 ml oil (for frying)
Instructions

Wash the potatoes, cook them with skins in salted water for about 25 minutes until soft, drain, steam to remove moisture and let cool. Peel and press through a potato masher, then mix with flour, egg yolks, olive oil, and 1 tsp salt into a dough.

Wash and trim the broccoli, cut into small florets.

Blanch the broccoli florets in boiling salted water for 4 minutes, drain and immediately shock them in ice water.

On a floured work surface roll the potato dough into a log, dust with flour, and cut into 16 pieces. Flatten each piece slightly, form a shallow well, and place one broccoli floret on top of each.

With damp hands shape small balls around the florets, then roll them in almond flakes.

Heat oil in a pot or fryer and fry the balls in batches for about 5 minutes until golden brown.
