Ingredients

  • 100 g pre-cooked potatoes (peeled)
  • 2 tsp oil
  • 80 g young spinach
  • 2 Eggs
  • Salt
  • Pepper

Instructions

    Slice the potatoes into thin rounds. Wash the spinach, dry and set aside.

    Heat the oil in a non-stick pan and fry the potato slices until golden. In a bowl whisk the eggs with salt and pepper, pour over the potatoes, sprinkle with spinach, and cook on low to medium heat for about 10 minutes until set.
