Baked Quail with Stuffing

Ingredients
- 4 quail (prepped, skin removed)
- Salt
- Pepper (freshly ground)
- 1 onion
- 1 small apple
- 2 tbsp butter
- 2 slices toast bread
- 1 tbsp Lemon Juice
- 1 tbsp freshly chopped herbs (e.g., thyme, sage, parsley)

Instructions

Preheat the oven to 200°C with top and bottom heat.

Wash the quail, pat dry, season inside and out with salt and pepper.

For the stuffing, peel the onion and apple, halve the apple and remove seeds. Dice apple and onion, sauté in 1 tbsp butter until softened, then cool. Toast bread cubes in remaining butter until golden. Mix bread, apple-onion mixture, herbs, lemon juice, salt, and pepper. Stuff quail and bind loosely if desired.

Place each quail on a large piece of buttered foil, fold into a packet, seal tightly, puncture several times with a knife, and bake for 25 minutes in the preheated oven. Open foil, turn on broiler, and grill quail for 5–10 minutes until golden brown.
