Ingredients
- 150 g flour
- 100 g butter
- 1 egg yolk
- 2 tbsp heavy cream
- 75 g sugar
- 1 pinch salt
- 800 g plums
- 250 g low-fat quark
- 100 ml heavy cream
- 2 Eggs
- 1 tbsp freshly grated lemon zest (organic lemon)
- 3 tbsp sugar
Instructions

Knead flour, butter, egg, cream, sugar and salt into a shortcrust dough, wrap in foil and chill in the refrigerator for about 1 hour.

Wash, dry, halve and pit the plums. Then quarter them. Preheat the oven to 200°C (180°C fan).

Roll out the shortcrust dough on a floured work surface into a circle and place it in a lightly greased tart tin. Raise the edges and prick the base with a fork. Whip the cream stiffly. Mix the quark with the eggs, sugar and lemon zest. Fold in the whipped cream. Spread the quark‑cream mixture over the dough. Arrange the plums on top of the filling. Bake in the hot oven for 35 minutes until golden brown. Let cool and serve warm.
