Spinach salad with roasted pumpkin, onions and feta brought to life by Spoonsparrow in no time.
Ingredients
- 400 g pumpkin (peeled)
- 4 red onions
- 1 handful young spinach
- Salt
- 6 tbsp Olive oil
- 2 tbsp balsamic vinegar
- 2 tbsp lemon juice
- a pinch sugar
- 80 g feta
- 0.5 tsp Dried oregano

Cut the pumpkin into small pieces. Peel and slice the onions into wedges. Wash, trim, and roughly chop the spinach as needed. Sauté the onions with the pumpkin in 2 tbsp hot oil for about 5 minutes until slowly golden brown. Season with a little salt.

Whisk together the remaining olive oil, balsamic vinegar, lemon juice, and sugar. Taste and adjust seasoning with salt. Slice the feta into four pieces. Combine the vegetables with the spinach and distribute onto bowls. Place one slice of feta on each bowl and sprinkle oregano over it. Serve the dressing separately.
