Potato Salad with Smoked Fish

Ingredients
- 800 g potatoes (young)
- Salt
- 3 sprigs rosemary
- 2 tbsp butter
- 1 small head lettuce
- 700 g smoked salmon (whole piece)
- 200 g Sour Cream
- 50 g whipping cream
- 2 tbsp lemon juice
- a pinch of seasoned broth
- Salt
- white pepper

Wash the potatoes thoroughly and boil them in salted water for 25-30 minutes. Drain, let cool, then cut into strips. Wash rosemary, shake dry, strip leaves from stems and chop. Toss with potatoes in hot butter.

Wash, trim, and pat dry the lettuce; tear into bite-sized pieces as desired. Tear the salmon into pieces as well. Mix potatoes, lettuce, and salmon, divide onto four plates. Combine all ingredients for the dressing in a bowl, whisk well, season to taste, then drizzle over the salads before serving.
