Ingredients

  • 400 g Quinoa
  • 2 red bell peppers
  • 1 can corn
  • 2 Spring Onions
  • juice of half a lemon
  • 1 tsp Honey
  • 3 tbsp grape seed oil
  • 2 tbsp wine vinegar
  • 2 tbsp chopped rosemary needles
  • 0.5 tsp coriander
  • 0.5 tsp Fennel seeds
  • Salt
  • freshly ground pepper

Instructions

    Prepare quinoa and vegetables

    Cook quinoa in salted water for about 15 minutes over gentle heat, then drain.

    Wash bell peppers, halve, seed, remove white membranes, and dice into small cubes.

    Drain corn.

    Wash spring onions, trim, and slice finely into rings.

    Combine all

    Mix quinoa with spices, rosemary, pepper cubes, corn, spring onions, honey, oil, vinegar, and lemon juice. Season with salt and pepper. Chill and let rest for 30 minutes. Taste again before serving.
