Potato Salad with Cucumber

Ingredients
- 800 g waxy potatoes
- Salt
- 0.5 cucumber
- 2 small onions
- 125 ml meat broth
- 1 tsp sharp mustard
- 4 tbsp white wine vinegar
- pepper (ground)
- 1 bunch chives
- 5 tbsp olive oil

Wash the potatoes and boil them in salted water for about 25 minutes.

Meanwhile, wash the cucumber, cut it lengthwise in half, slice thinly, sprinkle with salt, let stand for about 20 minutes, then squeeze out excess liquid.

Peel the onions, dice finely, add to a pot with broth, bring to a boil. Stir in mustard and vinegar, season with salt and pepper, then remove from heat.

Drain the potatoes, allow them to steam off, peel, cool, slice, pour hot broth over them, gently mix, and let rest for about 20 minutes.

Rinse the chives, shake dry, cut into fine ribbons. Mix cucumber and olive oil into the salad, adjust seasoning, plate, and serve.
