Potato Salad with Sausages

This potato salad with sausages is a light variation of the classic, without mayonnaise.
Ingredients
- 800 g waxy potatoes
- 1 bunch spring onions
- 1 bunch parsley (20 g)
- 150 g pickles
- 125 g apples
- 1 organic lemon (juice and zest)
- 2 tbsp olive oil
- 4 tbsp vegetable broth
- 1 tbsp white balsamic vinegar
- 7 g mustard (1 tsp)
- 2 tsp Honey
- Salt
- Pepper
- 1 Red Onion
- 0.5 tsp Peppercorns
- 4 poultry sausages

Cook potatoes in boiling water for 20–25 minutes. Then rinse, peel and let cool completely.

Meanwhile trim, wash and finely chop spring onions; wash parsley, pat dry and roughly chop; dice pickles; peel, halve, core and cube apples.

Whisk lemon juice and zest with oil, broth, vinegar, mustard, honey, salt and pepper to make the dressing.

Slice potatoes. Combine salad ingredients with dressing and let sit for 1 hour.

Peel onion and slice. Heat water with onions and peppercorns. Warm sausages in hot water for 5 minutes (do not boil) and then let steep another 5 minutes. Season potato salad with salt and pepper. Serve the potato salad with sausages.
