Ingredients

  • 16 new potatoes (medium, waxy)
  • Salt
  • 1 tsp cumin
  • 1 stalk leek
  • 20 g butter
  • 100 g diced breakfast bacon
  • Salt
  • black pepper (ground)

Instructions

    Wash the potatoes thoroughly and cover them in a pot with water. Add salt and cumin, then cook covered for 20–25 minutes until tender. Drain and let cool slightly.

    Meanwhile, clean the leek by removing the dark green parts. Slice the remaining white and light green portions into fine rings and rinse. Preheat the oven to 200°C (fan).

    Heat butter in a pan and fry the bacon until crisp. Add the leeks, keeping them moist, and sauté for 4–5 minutes while stirring occasionally. Season with salt and pepper.

    Carefully hollow one side of each potato using a Paris fork, filling it with the pan contents. Place the stuffed potatoes in a baking dish and bake in the preheated oven for about 20 minutes.
