Potato Salad with Radishes

Ingredients

  • 1 kg waxy potatoes
  • 1 small mild onion
  • 200 ml vegetable broth
  • 4 tbsp fruit vinegar
  • 1 tbsp grainy mustard
  • Salt
  • Pepper
  • 250 g radishes
  • 80 g arugula (2 handfuls)
  • 10 g chives (0.5 bunch)
  • 3 tbsp Rapeseed oil

Instructions

    Wash the potatoes and steam them in a steamer insert in a closed pot for approx. 30 minutes.

    Meanwhile, peel and finely dice the onion. Bring the broth to a boil and add the onion. Remove from heat and let it steep for about 5 minutes. Stir in the vinegar and mustard and season the marinade with salt and pepper. Wash, clean and slice the radishes. Wash, clean and shake the arugula dry. Snip into smaller pieces if desired. Wash and roll the chives.

    Let the potatoes steam, then peel them while still warm and cut them into slices. Mix with the marinade and let it stand for about 30 minutes.

    Mix the radishes, arugula, chives and oil into the salad. Season the potato salad with radishes again and serve.
