Ingredients

  • 400 g shrimp (cooked and peeled)
  • 1 tbsp parsley (finely chopped)
  • 1 stalk celery (thinly sliced)
  • 3 spring onions (thin rings)
  • 1 tbsp coarse mustard
  • 3 tbsp white wine vinegar
  • 6 tbsp Olive oil
  • Salt
  • fresh ground pepper

Instructions

    Whisk together mustard, vinegar, salt, and pepper; gradually whisk in the oil until emulsified. Fold in the prepared vegetables and parsley.

    Rinse the shrimp, pat dry, and add to the salad. Cover and refrigerate for several hours before serving.
