Potato Salad with Chorizo

Ingredients

  • 800 g small potatoes
  • 400 g chorizo
  • 4 tbsp mixed herbs (e.g., chives, watercress, oregano, basil)
  • 1 radicchio (≈250 g)
  • 2 tbsp olive oil
  • 4 tbsp white wine vinegar
  • Salt
  • ground pepper

Instructions

    Wash the potatoes thoroughly and boil in plenty of salted water for 20-30 minutes until tender.

    Slice the chorizo thinly. Wash and dry the herbs. Clean the radicchio, remove stems, and tear into bite‑sized pieces.

    Drain the potatoes and cut them in half. Heat the oil in a non‑stick pan and fry the potatoes with the chorizo until golden brown.

    Place the radicchio in a bowl, add the potatoes, deglaze the pan with a little water and pour over the salad. Stir in vinegar and herbs, then season with salt and pepper. Serve immediately.
