Potato radish salad with chives from Spoonsparrow: The combination of mayo, sour cream and yogurt makes the potato salad less heavy.

Ingredients

  • 800 g early potatoes
  • Salt
  • 10 radishes
  • 1 bunch chives
  • 6 tbsp mayonnaise
  • 2 tbsp Sour cream
  • 1 tsp medium-hot mustard
  • 2 tbsp Yogurt (3.5% fat)
  • pepper (ground fresh)
  • a splash lemon juice

Instructions

    Wash the potatoes thoroughly and boil them in salted water for about 25 minutes.

    While the potatoes cook, wash, trim and finely chop the radishes. Rinse the chives, pat dry, shake off excess moisture and cut into fine ribbons. Whisk together mayonnaise, sour cream, mustard and yogurt; season with salt, pepper and a splash of lemon juice.

    Drain the potatoes, let them steam to release excess water, then allow them to cool slightly. Cut into quarters and combine with radishes, chives and the dressing. Let sit briefly, taste again, then serve in small bowls.
