Ingredients

  • 250 g waxy potatoes
  • 250 g quark
  • 1 tbsp sugar
  • 25 g flour
  • 25 g semolina
  • 1 egg
  • 1 yolk
  • 1 pinch salt
  • 60 g Butter
  • 6 tbsp ground poppy seeds
  • 2 tbsp powdered sugar
  • flour (for dusting)

Instructions

    Wash the potatoes, cover with water and simmer for about 25 minutes. Drain, let cool slightly and peel. Pass through a press and mix with quark, sugar, flour, semolina, egg, yolk and salt into a smooth dough that no longer sticks (add more flour if needed). Cut walnut-sized pieces, dust with flour and roll between hands into small dumplings. Place side by side on the floured work surface.

    Bring plenty of salted water to a boil, add the potato dumplings in batches and let them sit for about 3 minutes over gentle heat. Remove, shock in cold water and drain well. Heat butter in a non-stick pan, fry the dumplings for about 2 minutes until golden yellow and fold in poppy seeds. Dust with powdered sugar before serving.
