Ingredients

  • 4 peaches
  • 80 g sugar
  • 400 ml dessert wine
  • 40 ml peach liqueur
  • 1 tsp elderflower syrup
  • 1 tsp lemon juice
  • 100 ml sparkling wine
  • 2 tbsp lime zest

    For the peach soup, steep peaches in boiling water, shock, peel, pit and slice into wedges. Caramelize sugar to a golden yellow and gently deglaze with sweet wine while stirring. Simmer half the peaches in the syrup covered for 5-8 minutes.

    Finely chop 1 tbsp of lime zest and add. Puree with an immersion blender, then season with peach liqueur, a touch of elderflower syrup, and lemon juice; let cool. Chill in the refrigerator for one hour. Divide the chilled peach soup into two bowls and serve cold garnished with lime zest.
