Potato Pizza with Halibut

Ingredients
- 700 g halibut fillet
- Salt
- pepper (ground)
- 6 tbsp Olive oil
- juice of one lemon
- 2 Garlic cloves
- 2 tbsp dill (finely chopped)
- 2 tbsp parsley (finely chopped)
- 2 tbsp chervil (finely chopped)
- 1.5 kg potatoes
- 1 egg
- 1 yolk
- 1 Tbsp starch
- 800 g tomatoes
- 250 g mozzarella
- 125 g parmesan (freshly grated)
- dill sprigs (for garnish)
Instructions

Cut the fish fillet into small pieces and season with salt and pepper. Mix 4 tbsp oil with lemon juice, press in garlic cloves. Combine the fish pieces with herbs and oil mixture and set aside covered.

Wash potatoes and boil them with water and a pinch of salt over medium heat for about 25 minutes until tender, drain, rinse, peel, and mash using a potato masher.

Knead the mashed potatoes with a little salt, egg, yolk, and starch. Brush the baking sheet with remaining oil and spread the potato dough evenly on it, pressing down.

Bake the potato dough in a preheated oven at 225 °C for about 20–25 minutes to pre-bake.

Meanwhile, wash tomatoes and slice them; cut mozzarella into small cubes.

Top the pre-baked dough with tomato slices, season with pepper and salt. Distribute halibut pieces over the tomatoes and place mozzarella cubes between them. Sprinkle parmesan on top and drizzle with fish marinade.

Reduce the oven temperature to 200 °C and bake the pizza for another 35 minutes. If it browns too quickly, cover with foil. Serve sliced, garnished with dill sprigs.
